Cooking

Constance describes cooking as a form of art that just so happens to be a necessary sustenance. As a child, her mother would teach her recipes passed down from her great-grandfather, she believes this taught her to organize, clean, and slow down and keep calm.

Q: What are your favorite dishes to make? 

A: Pasta, egg friend rice, potato aligot, and dumplings!

Q: What are favorite desserts?

A: Cookies, tiramisu, creme brulee

 Constance's Egg Fried Rice 

Ingredients: Rice (1 and 1/2 cups) eggs (2) vegetable oil (2 tablespoon) Onion(1/3 of a whole onion) green onion(one single bulb) garlic(two cloves) soy-sauce(4 table spoons) salt(about to teaspoons)

1)   Preparation: whisk eggs together until smooth, peel and cut cloves and green onion, separate green and white parts of green onion. Sauce: combine soy-sauce and salt then add the green parts of green onion.

2) Cooking: On high, heat pan and add oil, put in garlic and white parts of the green onion, let it simmer and put in your overnight rice, combine. Add in sauce and incorporate, move to low heat and add rest of oil, pour eggs on and scramble then incorporate within rice. 

3)serve then garnish on top with green onion

Above is one of Constance's favorite dish, it's simple yet delicious with tradition Chinese aromas.

 Constance's Cookie Recipe 

Ingredients: unsalted butter (100g), brown sugar (75g), 

 granulated sugar (38g), 1 egg yolk, a splash of vanilla extract (optional), flour (135g),  baking soda (1/2 teaspoon), salt (1/2 teaspoon), chocolate chips (personalize amount, optional)

1)   Preparation: preheat oven to 350F line baking tray with parchment paper (Note: add small amount of oil to ensure parchment paper sticks)

2) Baking: In a bowl, whisk flour salt and baking soda until combined. In a larger bowl, whisk softened butter and sugars until well combined and creamy; add egg yolk and vanilla extract and continue whisking until all ingredients are incorporated. Slowly add flour mixure into the larger bowl slowly folding it in with spatula. Once wet and dry ingredients are mixed, add in additives (eg. chocolate chips, nut etc.) Finally, make small balls of cookie dough and lay on parchment paper a little over an inch apart. Bake for 10 minutes until edges are golden and crispy.
